  5. Cut several slits on the top of the pastry. Beat one egg with 1 tablespoon water, and brush the egg over the pastry. For the top layer, brush the rim of the pie dish with a little water, then cover the entire rim with pastry strips.
  6. Bake for 25 minutes. Reduce oven to 350 degrees F (175 degrees C), then bake for an additional 20 minutes. Cool on a wire rack.
